Most knife users consider maintaining a consistent angle to be the most difficult part of sharpening a knife. The Japanese knife sharpening guide clip Naniwa is a simple and easy-to-use tool that will help you with this problem.
Attach it to the back side of the knife and place it approximately in the middle of the blade's length. Make sure that the guiding clip is securely attached to the blade and that the blade is fully inserted into the guiding clip.
Move the knife and the clip along the sharpening stone so that every part of the blade comes into contact with the stone, while keeping the ceramic friction rod in contact with the stone. Lift the handle as needed to keep the edge in contact with the stone as you move towards the tip.
Stay on one grit until you feel burrs along the entire opposite side of the blade, then turn the blade and do the same on the other side. Repeat the process through progressively finer sharpening stones until you are satisfied with the sharpness of the blade.
The Japanese knife sharpening guide clip Naniwa is not adjustable. The angle it creates is determined by the width of the knife being sharpened. The wider the knife, the smaller the sharpening angle. Therefore, we recommend it only for traditional kitchen knives with a blade width of 1.9 cm or more. For example, a blade with a width of 3.2 cm will be sharpened to an angle of 17 degrees with this clip.
